Seasonal fish dishes for the middle of summer.

My executive chef Cris Macis at deWintons corporate party catering London has just written the most delicious menus, I wouldn’t be able to choose between them.

Here’s a sneak preview of just a couple of my favourite ones.

Pan- fried smoked Haddock and potato fish cakes, poached Burford Brown egg with wilted spinach and a Hollandaise sauce. ¬†Actually I’m in heaven reading it all over again!

or how about;

Seared fillet of Gilt head Bream sitting on a Broad bean and Lemon risotto served with grilled Asparagus and a summer herb dressing.

Now be honest which one would you choose?
