Jacs, deWintons boss lecture’s at Leith’s School of Food & Wine

I’ve had a fabulous morning talking to all the lovely Leith’s diploma students on how to set up your own business.

It brings back amazing memories of my diploma back in 1991, how young and innocent I once was!  An awful lot has happened since then, as I was telling the Leith’s students it all takes time but it’s definitely worth it.  I started with 5 years work experience from working at Leith’s, cooking in Barbados, Ski season in Courchevel, commis chef with Anton Mosimann then onto By Word of Mouth for a year as their Sous chef.

It’s over 17 years since I started the business back on 1st November 1991, wow I can’t believe it, loads and loads of hard work but so rewarding.  Best thing is I’m still loving the world of catering.
